Crunchy Caesar Salad

This Caesar is great if you love a chicken caesar or a vegetarian version...
Ingredients:
leaves or lettuce to fill your bowl
cheese of choice a small handful
can of drained chickpeas
1/4 cup of flour of choice
tsp of onion powder and garlic salt
1/4 rasher of bacon
cherry tomatoes quartered
red onion finely sliced
chicken breast seasoned - I recommend with garlic salt, dried thyme and rosemary
1 egg to poach
caesar dressing of your choice and amount
Start with your chickpeas, add the drained chickpeas to a bowl with some olive oil, about a tsp and the flour, onion powder and garlic salt. Mix to coat the chickpeas then add them to a baking paper lined oven tray. Pop them in the oven at the top, or under a grill on about 200 deg. Keep an eye on them and toss after 5-10 mins to make sure they are evenly browned and crispy.
Please note: 1 can of chickpeas will serve between 2 & 4 people depending on how many you add per salad. You can store the crispy chick peas in a container and use within a few days.
Put a saucepan on with water to boil, add some vinegar of choice - this is to poach your egg.
While the chickpeas are in the oven slice your chicken breast into 3 slices or butterfly slice it. The aim is to have large peices of chicken to grill and slice smaller once cooked. Season as you like then grill in a normal pan until tender and cooked. Add your bacon to the pan to get crispy while the chicken cooks.
While the chicken is cooking slice your salad vegetables and dont forget to check the chickpeas.
Once chickpeas and chicken are cooked, poach your egg. Slice the chicken and assemble the salad as you like.
The chickpeas give a great cruch and make the salad very filling. If you are vegetarian or even vegan they can replace the taste and texture of bacon!!
MY TIPS: I use coles brand caesar as it's cheap and tastes great. Not as good as Paul Newmans caesar though! This salad is flexible!
The chickpeas are great!! If you want tender chicken cook in big pieces and slice after cooked!
